Lyndsey's Amazing Meatloaf

Okay I might be bias but it is surely the best meatloaf that I have ever had.



You need two pounds of ground beef, I like to use the extra lean ground sirloin because for one the meatloaf doesn't get as greasy from the fat and because it is better for you. A box of Stove Top Stuffing, two cans of Campbell's Beef Gravy, two eggs and a cup of water.


First mix in the box of stuffing.


Next add in the two eggs.


Lastly mix in one can of the beef gravy. I pour some of the water into the can and swirl it around to make sure I get most of the gravy out of the can. Then add the rest of the water, this helps from the meatloaf from getting dried out, so make sure you use water!


Place foil over two cookie sheets for easy clean up.


I make four mini meatloaves and then use the second can of beef gravy to pour on top.

Bake at 350 degrees for about 45minutes to a hour. Baking time depends on your oven.

Day 27: STOVE!





That right there is the clock on my stove!!! Yes I have a stove and I am so very happy that I can cook once again at my own house, in my own kitchen.

On the menu for tomorrow night meatloaf and chocolate cupcakes (okay maybe no the cupcakes but I promised the guys at work that I would make them cupcakes for Thursday morning).

The best thing is the electrician canceled on us and me being the impatient person that I can be sometimes decided that between our two engineer minds and a contractor's son, we could figure out how to wire up a stove.

First I went to Lowes, my new favorite store, and got the proper plug. Unfortunetly when I got there I had forgotten which type of plug I needed; so I decided to get both the three wire plug and the four wire plug to prevent from having to run back to Lowes. For our stove we needed the four wire plug.

Big-D drilled the wire box and plug receptor to the cabinet and then drilled a hole through the cabinet so the plug would fit through. All of which is now hidden behind a cabinet.


So happy that I have a working stove, no more fast food for a very long time (or Friday, I always get Taco Bell on my way home from work at midnight.)


The cabinets in their new homes, all I need is some counter top and we will be good to go.

Day 26: Fixing the Closet Wall

You may ask "Lyndsey why did you need to fix the closet wall?"

I need to fix it because I broke it.

You may ask "Lyndsey how do you break a wall?"

I would answer "because I went to go remove the shelves that the previous owner had used 4 inch nails to put the shelves in so we could put nice closet organizers in. While removing these nails I went right through the wall. Comes to find out the only thing that separated the two closets was ONE piece of drywall."


Anyways we put together a nice little frame in the closet and now all it needs is some new drywall and it will be good to go.

Giants Beat the Packers!

GIANTS WIN!!!

Very short post tonight as I am very tired from being at work until midnight. Also very hungry since Spaghettio's really don't fill me up anymore and for some odd reason I only pack them for lunch, so now I'm cranky do to lack of food.

But I am very happy to find out that my second favorite team (New York Giants) beat the Green Bay Packers. Sorry Aunt Laura but when it comes to the Mannings I must root for them.

Yes I am a Giants fan mainly because Eli Manning is my beloved Peyton Manning's brother. And I miss Peyton very very much, just ask Big-D how much I miss my Peyton.

Few Things About Michigan

I love the state that I am from. I love it so much that I really have no plans to ever move away, even though come March when it is still snowing I would give anything to move far far away from Michigan.

Here is the reason that I wish to move far far far from this place...

On Wednesday it was a lovely 53° degrees by Thursday afternoon it was snowing and Friday morning when I woke up, I woke up to 3 to 4 inches of snow.


My backyard covered in snow, it looks so pretty maybe I will get someone to build a snowman out there and make a couple snow angels. (If you didn't know what I meant by someone, I meant me.)




Tree fort would make a perfect place to throw a snowball at someone...don't tell Big-D where I will be hiding. :) 


She looks so cold out there all covered in snow.


I love the farm with a blanket of snow. Just so you know this is the farm that I grew up on (aka my parents farm).


The white fence seems to blend in.


Oh the joy of living in Michigan, maybe I will post again about Michigan and the interesting things about the great state.

The Things You Learn In College


This picture came from my Engineering Mechanics Dynamics book. The very last line of the problem states "Moral: If you must drink, please don't drive!".

Yeah, that's right my college book totally told us not to drink and drive, then after solving the problem my teacher says " I hope you apply what you just learned in real life."

In case you care the sober person's stopping distance was 517 feet and the person with 0.1 alcohol level person's stopping distance was 616 feet. If you would like to see the math, contact me.

Two Years Ago Today

Two years ago today, January 10th 2010, I got into my first car accident. This car accident wasn't like any other car accident; it involved just me and some black ice. Unfortunately my truck lost but I come out with only a little cut on my thumb.

I first went into a ditch then rolled three times into a farmer's field.

Here are some of the aftermath pictures:


See that White Jeep off to the left, it went through the owner's house. Guess it wasn't a good day for Jeep Grand Cherokees.

All of the windows in the my truck were busted out except the windshield and ironically the sunroof.

This car accident has left me terrified of driving in the snow. I think I might be getting over that fear but I don't know if I will truly ever get over it. However, I do think I've become a more careful driver, well if there is a potential for there to be snow and ice on the road.
